Because we don’t eat a lot of nuts and avoid almond flour most of the time, I’ve found it hard to make grain-free biscuits. All of the nut-free versions I’ve tried taste strongly of coconut flour and/or eggs and even with jam, you can’t mask that flavor. These paleo biscuits are a different story! By combining a mixture of flours, I’ve found a way to keep them grain and nut free without any overpowering undesirable flavors.
If the southern gal (or guy) in you is jonesin’ for a biscuit, these will fit the bill. Slather these babies up with some butter or load ’em up with a sausage patty ’cause breakfast is fun again.
